vegan apple lentil salad


my last post was about copious amounts of baked goods.

today, it’s about lentils.

obviously, i am a person in serious need of balance.

warm salads are a new thought for me.

or maybe this would be better off dubbed a “vegan stew”.
salad sounds better though.

after a holiday filled with all sorts of cookies and (heaven help us) fruit breads, my body let me know i needed some nutrients today.

like, mr. t style.

(**note, i did eat vegetables over christmas. my vegetable to cookie ratio was pretty out of whack though, anyone?)

this is goodness in every way that cookies and lemon poppy seed bread are not.

lentils and quinoa team up to pack a vegan protein punch that would send superman into next week.

curry and coconut melt into the perfect blend of spice and sweet.

it’s vegan. it’s seasonal. it’s delicious.

and it’s a warm salad.

vegan apple lentil salad
adapted from: simply in season

you will need:

1/2 cup of plain ol’ green lentils
1/2 cup of pretty red lentils
1 cup of hot water
2 TBSP coconut oil
1 large yellow onion, chopped
3 tsp of red curry paste
1/2 tsp tumeric
2 more cups of water
1/2 cup of cocount juice or coconut milk
1/4 of a head of red cabbage, chopped
2 cups of cooked quinoa
2 granny smith apples, cored and chopped
sea salt to taste

mix the two types of lentils together with the hot water and let them soak for about 15 minutes. drain excess water.

heat coconut oil in a large pan over medium high heat. saute onions and lentils together until the onions start to look translucent.

add two additional cups of water and reduce heat to let simmer. stir in curry paste, tumeric, coconut juice/milk, cabbage and cooked quinoa. let simmer till all the liquid is absorbed.

stir in apples about 5 minutes before serving, so they’re heated through but still a little crunchy.

add sea salt to taste.

it’s the perfect blend of slight curry spice, fruity sweetness, a hint of tart cabbage and satisfying lentils all wrapped up in a warm winter salad.
